Basic Baked Oats Recipe (serves 2):
- 100g rolled oats (not instant oats)
- 120ml milk (dairy or your favourite plant-based alternative)
- 2 large eggs
- 0.5 teaspoon baking powder
- Couple of teaspoons of sweetener or more to taste (honey, maple syrup, or brown sugar all work beautifully)
Mis all your ingredients together and put them in an ovenproof dish or in ramekins. Bake in the oven at 180C for about 30 mins (but don’t overcook or they can go dry). You can also cook them in the airfryer at 180C for 15-20 minutes.

- Whisk up 6 large eggs and 250ml milk, season generously, and pour over the base.
- Add your mix-ins – any of the following are good: 150g cooked bacon, 150g sausages, 100g mushrooms, 100g spinach, or even 150g roasted veggies.
- Top with 100g grated cheese (because everything is better with cheese).
- Bake at 180C for about 45 minutes or until golden and puffed up, and prepare to bask in the glory of your creation.
It’s hearty, satisfying, and reheats like a dream – perfect for a relaxed brunch spread.
3. Fruit Crumbles: Dessert for Breakfast
Who says crumbles are just for after dinner? A warm fruit crumble makes a delightful weekend breakfast, especially when paired with creamy yoghurt. The beauty of crumbles is that you can use whatever fruit you’ve got on hand – fresh, frozen, or even tinned.
The Crumble Formula (for 4 people):
- For the filling: Combine 500g fruit with 75g sugar and a squeeze of lemon juice. Toss in 1 tsp cinnamon or ginger for added warmth. Put in an overproof dish.
- For the topping: Rub together 100g plain flour with 50g butter until it’s like breadcrumbs. Stir in 50g oats or 50g chopped nuts for extra texture. And in 50g Demerara sugar and distribute evenly over the fruit mix.
- Bake at 180C / 160C fan for 35 – 45 minutes until bubbling and golden, and serve straight from the oven. It’s indulgent but still feels wholesome, especially if you’re using lots of fruit. And if there’s any left, it makes a fabulous mid-morning snack (if it lasts that long).
4. Shakshuka… but Make It Baked
Shakshuka is a Middle Eastern dish of eggs poached in a spiced tomato and pepper sauce. It’s usually cooked on the hob, but baking it takes all the effort out of the equation.
Basic Baked Shakshuka (serves 2):
- Start with a base of sautéed onions (1 medium onion), garlic (1 clove), 1 or 2 peppers, and a 400g tin of chopped tomatoes, seasoned with a blob of tomato puree, 1 tsp paprika, 1 tsp cumin, salt & pepper, and an optional pinch of chilli flakes.
- Put the mixture in an ovenproof dish and bake for 20 minutes or so until hot.
- Carefully make 4 indents in the top and crack an egg into each hole.
- Return it to the oven and bake for 5-8 minutes until the eggs are just cooked – you want the whites to be set and the yolks to be runny.
- If you like, sprinkle over chopped parsley and perhaps a bit of crumbled feta to serve.
Serve with crusty bread or pita for scooping up every last bit of that luscious sauce. It’s flavour-packed, hearty, and just exotic enough to make you feel like you’re on holiday.

- Breakfast Pies: Line muffin tins with puff pastry, fill with scrambled eggs (made from 4 eggs), 50g bacon, and 50g cheese, and bake until golden. This amount makes about 6 pies in a standard muffin tin.
- Fruit Danishes: Top squares of puff pastry with 50g cream cheese and 100g fresh fruit, then bake for a fancy-looking breakfast that’s deceptively simple. Expect 4–6 danishes, depending on your portion sizes.
- Savoury Tarts: Spread puff pastry with 3 tbsp pesto, add 150g cherry tomatoes and 100g cheese, and bake for a quick, elegant breakfast option. This makes 4 small tarts or a single large tart, depending on how you cut the pastry.
